Treasured for its uniquely sweet, delicate flavour – a bit like a mango – persimmon fruit is at its juicy peak of ripeness when its flesh is soft-firm and fragrant. Try it as-is, halved and scooped. Cook into jam, bake in cakes, cut into wedges and add to salads or platters with nuts and cheese. They’re a favourite of those in-the-know during the holiday season. Available from October until January and when they’re gone, they’re gone.
