    6 skinless, centre-cut salmon fillet portions (about 5 oz/150 g each)

Cooking Instructions

Preheat oven to 425°F (220°C). Line rimmed baking sheet with parchment paper.

Cook potatoes in saucepan of boiling salted water for 8 to 10 minutes or until tender when piercedwith fork. Using slotted spoon, transfer potatoes to plate. Add beans to same pan of boiling water; cook for 2 minutes or until tender-crisp. Drain.

Whisk together mustard, vinegar and honey in large bowl; drizzle in oil, whisking constantly. Whisk in half each of salt and pepper. Toss potatoes and beans in dressing to coat.

Arrange salmon on prepared baking sheet; sprinkle with remaining salt and pepper. Spread mayonnaise over tops of salmon portions. Combine pistachios, panko and parsley in small bowl; pat evenly onto tops of salmon portions, pressing gently into mayonnaise to adhere.

Bake in centre of oven for 10 minutes or until fish flakes easily when tested with a fork.

Toss potato mixture with chives; divide among six plates. Top each with a salmon portion.
